Paleo Pineapple Coconut Bars

When I think of summer foods, my mind goes to fruit! Specifically, pineapple! Who doesn’t love this awesome fruit? So versatile, too! In a salad, as a dessert, on the grill with something savory! You can’t go wrong! These (paleo/gluten free/grain free) pineapple coconut bars are a perfect summer treat. Really easy to make, and the flavor reminds me of a pina colada! Although I made these and had all of my family do the taste testing, these would be the most marvelous ending to a summer BBQ. What do you think?

Paleo Pineapple Coconut Bars

Serves: 12 bars
 
Ingredients
for the crust
  • ¼ cup coconut oil, melted + more for greasing
  • 1 cup almond flour
  • ¼ cup coconut sugar or honey crystals
for the filling
  • 3 cups chopped pineapple (fresh or canned)
  • 1½ cups sweetened or unsweetened coconut flakes (depending on how sweet you like it)
  • ¼ cup coconut sugar
  • 2 eggs
  • 2 tbsp almond flour
  • 1 tbsp vanilla extract
  • ¼ tsp baking powder
Instructions
  1. Preheat oven to 350 degrees
  2. Add all crust ingredients to buzz in a food processor until it forms a ball of dough
  3. Press dough evenly into the bottom of the pan
  4. Bake at 350 for 10-15 minutes
  5. Remove from oven and set aside
  6. Whisk together coconut sugar, almond flour, and baking powder in a bowl
  7. Add eggs and vanilla and mix until well combined
  8. Stir in coconut flakes and pineapple
  9. Spread mixture evenly over crust (add more coconut flakes for extra topping if desired)
  10. Bake for 20-25 minutes, until edges are golden.
  11. Allow to cool completely, then cut into squares (12)
  12. Best if served chilled!

Pineapple Kiwi Smoothie & Smoothie Roundup

Did you like this months plethora of smoothies? I know it’s the first of February,  but I have one final smoothie for you, and a roundup of all the others. Stay tuned this week for a giveaway, a copy of Everyday Grain Free Baking by my sweet friend, Kelly Smith. I’ve made a few things out of her cookbook now, and it really is fantastic.

This smoothie is easy, just a few ingredients, and great for an afternoon pick me up or sweet treat! Pineapple and kiwi just go so lovely together, this really is just such a winning combination. And, for purposes of this smoothie and future use, this is one of the best kitchen gadgets I own. I couldn’t live without it, and it doesn’t waste any of the pineapple!

Ingredients
  • 1 cup fresh pineapple
  • 1 cup fresh kiwi
  • 1 cup water
  • ice to taste
Instructions
  1. Prepare pineapple & kiwi as needed
  2. Add all ingredients to a blender or food processor
  3. Blend until smooth
  4. Serve Immediately

Pineapple Basil Smoothie

Happy New Year! How are you all doing with your resolutions? Many of you probably decided that losing weight would be one of them, right? I have that on my list also. 30 pounds of baby weight to get rid of (10 of them already gone). So I feel your pain! I’m starting off January with a month of smoothies. My goal is to get you 20. I figure that’s not too bad, one every other day. I drink them every morning, and I am always changing the ingredients based on what I have in the fridge or feel like that day. They fill me up (lots of fiber) and it’s a great way to start the morning. Not to mention the easiness, my sister just gave me her nutribullet, so I can make smoothie for lunch when I feel like it too! I hope you like this first one, I love the taste of pineapple, and both basil and pineapple are so good for you. Basil is a good source of magnesium, helps with cardiovascular health, and helps with inflammation (hello, vitamin A)!

Raspberry Pineapple Smoothie

Raspberry Pineapple Smoothie

How do all you Mom’s out there do it? I’m just starting to begin to get into a routine with my little Z, but it isn’t easy! I’m finding myself forgetting to eat - yes, that really does happen apparently! So I have been making a lot of smoothies these days. They are easy and I can throw them in reusable cup and carry it around the house with me as I feed, clean, and do mountains of laundry!

Raspberries have been on sale the past few weeks, so I’ve found myself eating a lot of these lately (along with my overabundance of blueberries). I put together this smoothie with some left over pineapple I had - and added some flax seed to help with milk production (great for breast feeding if you have a baby). High in Omega - 3, anti inflammatory, high in fiber, just to name a few! Enjoy - yum yum!

Raspberry Pineapple Smoothie

Ingredients

  • 1 cup fresh raspberries, washed
  • 1 cup pineapple, chopped and washed
  • 1 cup almond milk
  • 1 cup water
  • 1/2 cup - 1 cup ice (depending on preference)
  • 2 tablespoons flax seed

Instructions

  1. Pour all ingredients in a blender
  2. Blend until smooth
  3. Serve immediately
