My friend, Katherine, over at Green Thickies has the most amazing website with unbelievable smoothie recipes! She has lost a LOT of weight through a smoothie based diet and has so much knowledge to share (and great recipes)! She has inspired me to share my own story too!
If you had asked me five years ago that I would be where I am today, I would have never believed it! I wouldn’t even have dreamed of it! Running marathons, eating healthy, helping other people eat healthy, writing a food blog?? crazy. It is amazing when you change your diet and you actually feel good, you realize you just never want to go back to the way it was. Now, when I eat something that is not grain or dairy free, my body knows it and reacts almost immediately. How’s that for motivation to keep eating a clean diet?
Are there days I overeat, eat poorly, don’t work out, or just feel defeated? Sure. But when I look at the pictures (like the one below) I can’t help but smile. Look at how far I’ve come! That’s motivation enough! It definitely helps me look at the bigger picture and not beat myself up when I do have those days. I have lost 60 pounds to date. A size 14 to a size 4. It was a long journey, and a lot of work, but it was worth it!
Mango Coconut Smoothie

Anyways! I drink a smoothie every morning for breakfast. It doesn’t matter if it’s freezing cold or not! I go on kicks for a little while of the same smoothie, this one I drank a lot of a few weeks ago. Reminds me of my honeymoon in Aruba this summer! The mango and coconut blend perfect together, and the banana gives it an extra flavor boost. Definitely a smoothie you cannot go wrong with! Will bring you right back to summer!
- 1 cup coconut water
- 1 mango, peeled and sliced
- 1 banana (best if frozen)
- 1/2 cup almond milk or water
- 1/4 cup coconut shreds (sweetened or unsweetened
- ice to taste
1. Blend all ingredients together.
2. Serve in a glass and enjoy!
