Who doesn’t love bread? When I decided to go gluten free in January, I knew this one would be hard. Isn’t everything good found in carbs? I have always had a lot of food sensitivities (I’m even allergic to avocados!) so the more research I did, the more I found it just made sense to cut it out of my diet. Reading up I found: Gluten causes your blood sugar to spike, which can cause your body to store extra fat & can lead to higher chances of diabetes. Gluten can also create small holes in the intenstine lining, leaking food out of the stomach and causing inflammation or other serious disease.
I found out that I didn’t have to give up as much as I thought! There are so many other options out there to provide healthy, nourishing food to our bodies. I came upon this recipe and it made my whole house smell just incredible! There is nothing like warm bread just out of the oven. This one is quite easy to make, you can just throw everything into a food processor or blender and then put it in a pan to bake. Perfecet for a panini or sandwich! Heavenly!
Makes 12 slices (inspired by Multiply Delicious)
- 1/2 cup coconut flour
- 1/2 cup ground flax seed
- 6 tablespoons water
- 1 tablespoon of rosemary
- 1/2 tablespoon thyme
- 1/4 teaspoon salt
- 1 1/2 teaspoons baking soda
- 5 eggs
- 1/4 cup coconut oil, melted
- 1 tablespoon apple cider vinegar
1. Preheat the oven to 325 degrees.
2. Add all ingredients in a food processor and buzz until smooth.
3. Pour ingredients into a loaf pan to bake for 35-40 minutes (or until you can stick a knife in it and it comes out smooth).
